Salmon on braised balsamic red cabbage
These days I do cook very often vegetarian or vegan food, but from time to time I do eat meat or fish. As I received the fish spice "Épices De La Mer" from Coop Fine Food, I had to come up with a succulent fish recipe. As in my opinion fish doesn't have such a strong taste itself, you need to have a side dish which absolutely goes well with the fish and doesn't steal his show ☺️
This braised balsamic cabbage is the perfect companion for salmon. I cooked the salmon just slightly in a buttered pan, which was rubbed with garlic halves before, and seasoned it with lemon zest and the Épices De La Mer spice.
The Épices De La Mer spice contains salt, algae, pepper and cornflower. The light blue from the cornflower and the green from the mixed algae gives your fish a very nice color. And it is very tasteful 💜 You can buy it in your Coop Supermarket (sorry, just available in Switzerland 🙈).
Salmon on braised balsamic red cabbage - 1 Person - 30 Minutes
- 1 purple carrot (alternative orange carrot), peeled and coarsely grated
- 80g red cabbage, sliced thinly
- 1 tbsp olive oil
- 1 tbsp sugar
- 2 tbsp balsamic vinegar
- salt & pepper
- 100g organic salmon
- 1 tbsp butter
- 1 clove garlic, cut into half
- 1/2 lemon, zest only
- Épices de la Mer, fish spice from Coop Fine Food
Braised balsamic red cabbage
Peel and coarsely grate the carrot and slice the red cabbage very thin.
Preheat a pan over medium heat with 1 tbsp olive oil. Place the carrot and cabbage in the pan and cook for 2 minutes. Add the sugar and cook for another 2 minutes. Add the balsamic vinegar and cook for about 5 minutes.
Season with salt and pepper.
Wash the salmon under cold water and dry it with a paper towel.
Rub the inside of a non-stick frying pan with the garlic halves and preheat it over medium heat. Place the butter and garlic* in the pan. Add the salmon and cook each side for about 2 minutes.
Meanwhile, place the braised balsamic red cabbage on a plate. Add the fried salmon on top, sprinkle with the lemon zest and Épices de la Mer.
* The garlic is just for the taste of the salmon, you do not have to eat it 🙈
